Fermented Rice Curd Kanji

Best made with leftover rice (pre boiled and cooled down)- cover it with water just enough to cover it and leave it overnight.
You will see fermentation bubbles in the morning
Mix it with homemade curd and coarsely mash it.
Add seasoning and a tadka of ghee or cold pressed oil, urad dal,curry leaves and chillies if you prefer.
